Poached feijoa and sweet coconut sticky rice

This recipe is great for those cold winter days when you wantsomething sweet and its too cold for ice cream. Serves 4 to 6 people.

Poached feijoas ingredients

1 cup of high quality raw sugar

3 cups of water

10 to 12 large feijoas peeled and sliced in to quarters

2 teaspoons of vanilla extract (or 1 vanilla pod)

1 lemon zest and juice


Place one cup of raw sugar, three cups of water, two teaspoonsof vanilla extract and one lemon zest and juice in a medium pot and simmeruntil sugar has completely dissolved.

Turn on to a low heat and add the feijoas and cook until soft. This takes 5 to 10 minutes.

Set aside to cool. Remove the feijoas from the pot and placethe pot back on the stove, on low, to reduce the poaching liquid until thick.

Sweet, sticky coconut rice ingredients

2 cups of short grain rice

1 large knob of butter

8 cups of water

1 can of coconut milk

1 cup of raw sugar


Place water in a sauce pan and keep simmering.

Place butter and rice in a separate medium pot, on a low heatand stir until butter is completely melted.

Add the coconut cream and one cup of water and bring to theboil.

While stirring the rice and coconut cream mix slowly and add theremaining water as needed. This should take about 20 minutes to cook.

Return the feijoas to the syrup and lightly warm. Serve byplacing the sticky rice on a large plate and drizzle the feijoas and syrup overtop. Most important of all enjoy this winter wonder.
